On-demand food delivery: a systematic literature review

Purpose The purpose of this paper is twofold: first, to review the extant academic literature on on-demand food delivery (ODFD) services, i.e. freshly prepared meals from restaurants customers enabled by online platforms; second, propose directions for future research in field. Design/methodology/approach This work reviews 59 papers published between 2016 and 2020. They are classified with respect both their methodology addressed themes, namely actors involved activities creating value ODFD ecosystem. latter was analysed applying a framework derived integration traditional models about platforms/business ecosystems. Results were validated through interviews practitioners. Findings Due its huge success significant complexities behind it, business has been gaining interest academics. authors’ highlights that (1) perspectives various should be integrated, moving towards an ecosystem-based view; (2) focus more restaurant operations role systems (3) despite they have investigated several contributions, human resource management logistics still present room further extensions, areas intervention/regulation distribution network/batching, respectively. Originality/value offers insights academics On side, it analyses systems, outlining research. managerial provides comprehensive view most critical value-creating businesses.
